Now that we are growing our own greens, I have totally fallen back in love with salad. Salad for breakfast, salad for lunch, salad for dinner- there are so many ways to make it, you can just keep it rolling with small variations for meal after meal.
The important thing is to start with super fresh produce, and add little things that pop out. Salad is a great medium for those things which are too expensive to eat in large amounts, like blueberries (which are pricey in California) and pine nuts.
Some of my other favorite additions: chives, basil, dill, fennel, edible flowers, strawberries, finely chopped kale, collards, and broccoli greens (the tender leaves), radishes, pumpkin seeds, feta or parmesan cheese, and any type of protein (I eat meat, so I like salmon or chicken in my salad... you could also throw in tofu or tempeh). I dress my salad with lots of fresh lemon juice (Meyer lemons are best) and organic olive oil (preferably the kind that actually tastes a little like olives).

Very deeeelish Sasha! I was thinking of you this past weekend as I planted some spinach seeds in my humble balcony flowerpot garden! I hope I will be lucky as you in regards to growing my own greens.

Nom! I eat a salad almost every day. Spinach, edamame, artichoke hearts, cranberries, carrots, home grown cherry tomatoes and fake chick'n patty. Oh, with a shiitake sesame dressing. MmmMMmm!

Yes! I love to put a soft boiled egg or two over my salad sometimes. Sooo tasty!
