I owe this kitchen trick to two people: first, my friend Manu, who came up for a camping trip on the Yuba river with us last summer and brought a giant bag of yummy food, including this specific brand of vegan mayonnaise; secondly, my hunny Chris, who discovered the magic of combining the vegenaise with the raw sauerkraut!
You can use a different kind of sauerkraut (we like our local one by In The Kitchen when they are in stock at the Co-op), but the raw stuff is the best way to go. There are so many benefits from the cabbage, to start with (cabbage actually helps repair your intestines, and may prevent some cancers), and when it is cultured raw, the probiotics give you an extra boost. A little goes a long way, since it's tart, so it's not actually as expensive as it might seem when you are just looking at it on the shelf in the store- a jar lasts at least a week in our two-person household.
I wouldn't call vegenaise a "health food", per se, but it's not bad for you, and it can trick you into eating all kinds of healthy things! I need a vegan option because I am allergic to eggs, but I was never a fan of other vegan mayonnaise brands at all. Then Manu showed me the light- the key is both the brand- Follow Your Heart- and the kind- Grapeseed. They make another kind but it is nowhere near as good! To me, this doesn't really taste mayonnaise-y, which might be a plus for some of you mayonnaise haters (you know who you are). It's just creamy and yum.
We use this magic combo on sandwiches, spinach salads, along with cooked cabbage, and all kinds of other things that need some extra flavor.
Another amazingly simple and tasty way to use the veganaise is to slather it on the inside of a tender kale leaf, fill it with pistachios and avocado, and roll it up. (That is also courtesy of Manu).
Bon appetite!
i don't like regular mayonnaise because of the small and what's in it, this seems like an very interesting alternative..always like learning of new products via your blog ;)

OMNOMNOM. That little recipe at the bottom sounds delicious! I'd like to make some vegan mayonnaise, then try it (although I'll probably use bok choy!).

Well hot damn. I'm certainly going to try this. We fly through our kraut over here, and I'm always looking for new ways to tone down its intensity.

Rollie makes our own raw kraut.. He is an expert at it and we usually have a big jar of it ready to eat! Haven't thought of putting mayonnaise on it tho!!
